Vegan Cookbook Give-Away!

A few weeks ago, I interviewed vegan cookbook author Lindsay S. Nixon and received some wonderful advice from her on learning to cook with vegetables. 

Today I’m excited not only to have been featured on her blog, but also to offer a give-away of her latest cookbook, Everyday Happy Herbivore

  1. Thanks for offering this giveaway. I'm originally from Maryland, too, but now live in the desert in the Southwest.

    I date an avid meat lover, and have put him through all the food documentaries to show him why we need to eliminate the animal products. Thankfully, he has agreed!

    I've been eye-ing Lindsey's book for some time. I'm eager to give some of her recipes a try, especially with my boyfriend who's dubious that the food will satisfy him!

    1. Thanks, Carrie! I love finding vegan recipes that my meat-loving husband can enjoy. I don't make vegan food all the time, but I do make it often. I love the simplicity of Happy Herbivore's recipes!

    2. By the way, I adapted one of your recipes for dinner last night and loved it! I ended up using Russian purple kale, a blended almond sauce, garlic, quinoa, and some shredded carrot for color. It was great! I have a relatively new Vitamix, and your blog is giving me some great new recipe ideas. Much appreciated!
