My wonderful husband made a crock-pot meal today that -- I'm pleased to report -- featured plant-based, whole foods. Hubby has clearly been listening to my recent blathering on about the importance of veggies: He included a lot of them.
I came home to a steaming-hot crock of chicken with potatoes and onions (both from our farmers' market excursion last weekend), peas and carrots (from the freezer), and green chilis and jalepenos (both from Trader Joe's). Way to put veggies at the center, honey! I won't speculate on how he made the broth, but it was warm and spicy, perfect for dipping a piece of naan.
